How It Works

Cured meat safety is a chemistry problem with a hard floor. Salt at ≥2.5% by weight of the meat suppresses spoilage bacteria; sodium nitrite at 100-200 ppm targets Clostridium botulinum specifically and gives cured meat its characteristic pink color and cured flavor. Too little nitrite fails to prevent botulism; too much crosses the USDA safe-ingoing threshold and carries a small but real cancer risk. The math has to be right.

Prague Powder #1 (also called pink curing salt #1) is 6.25% sodium nitrite and 93.75% salt. It is used for cures shorter than about 30 days — bacon, pastrami, corned beef, ham. To hit a 156 ppm nitrite target (the USDA typical recommended ingoing level for most whole-muscle products) in a 1 kg piece of meat, you need 1000 × 0.000156 / 0.0625 = 2.5 g of Prague Powder #1, which is 0.25% of meat weight. That's the source of the common "0.25% of meat weight" rule.

Prague Powder #2 is 6.25% sodium nitrite + 4.0% sodium nitrate + 89.75% salt. Nitrate slowly reduces to nitrite during long aging (30+ days) so it's used for dry-cured salami, prosciutto, and other slow-fermented products where extended cure time is needed. USDA limits ingoing nitrate to 148 ppm and total combined nitrite/nitrate to specific per-product caps.

The two curing methods:

Equilibrium (EQ) cure — add exact percentages of salt, sugar, and nitrite to the meat weight, seal in a bag, and cure until diffusion completes (roughly 5 days per cm of meat thickness at 3-4 °C). Impossible to over-cure because there's no more salt available than what you added. This is the safe method for home charcuterie.

Traditional (dry) cure — rub excess salt onto the surface, cure until target weight loss is reached, then rinse. Historically standard but harder to control precisely.

How to Use This Calculator

Real-World Use Cases

Bacon cure with EQ method

A home charcuterie maker cures a 1.5 kg pork belly using equilibrium method at 2.5% salt / 0.25% sugar / 156 ppm nitrite. The tool computes: 37.5 g salt + 3.75 g Prague Powder #1 (which delivers exactly 156 ppm nitrite) + 3.75 g sugar. She rubs the mix into the belly, seals it in a vacuum bag, and cures at 3 °C for 10 days (belly is roughly 3 cm thick, 5 days per cm minimum, doubled for safety margin).

Traditional dry-cured salami

A curer starts a 2 kg salami with Prague Powder #2 for extended aging (60+ days). Target ingoing nitrite is 120 ppm, nitrate 100 ppm — both well within USDA limits. Prague Powder #2 dose: 2000 × 0.000120 / 0.0625 = 3.84 g. That also delivers 2000 × 0.04 × 3.84 / 100 = 1.54 g nitrate → 77 ppm nitrate, below the 148 ppm limit. Salt at 2.75% is 55 g total. The tool computes and flags that both nitrite and nitrate are within safe limits.

Small-batch pastrami

A cook makes a 900 g pastrami with 3% salt at equilibrium plus 150 ppm nitrite. The tool converts: 27 g salt + 2.16 g Prague Powder #1 (delivering exactly 150 ppm nitrite). Because pastrami is a wet cure (submerged in brine), the tool also computes water volume for a 5% salinity brine that will penetrate the meat evenly at 3 °C over 5-7 days.

Tips & Safety Notes

  • Weigh, don't guess. Nitrite at 156 ppm is 2.5 g of Prague Powder #1 per kg of meat. Doubling that by "eyeballing" a teaspoon is enough to exceed the 200 ppm USDA ingoing maximum and can carry health risk. Use a 0.01 g scale for the cure salt.
  • Never use table salt for cures without adjusting. Table salt often has anti-caking agents that don't belong in cured meat. Use pickling salt, kosher salt, or sea salt.
  • Cure at 3-4 °C. Too warm (above 5 °C) risks spoilage during cure; too cold (below 1 °C) slows diffusion so much that the cure takes twice as long.
  • Rinse the surface before cooking. Excess salt on the outside will over-salt the finished product. Rinse under cold water, pat dry, and rest uncovered in the fridge for 24 hours before smoking or cooking.
  • Do not use Prague Powder #2 on short cures. The nitrate in PP#2 needs weeks to reduce to nitrite. On a 10-day bacon cure it won't fully convert, leaving nitrate in the product for no benefit.

Limitations & What This Tool Cannot Do

  • Regulatory scope. The tool uses USDA nitrite limits (200 ppm max ingoing for most whole-muscle products, 156 ppm typical target). Other jurisdictions (EU, Canada, UK) have different limits (EU: 150 ppm typical, 100 ppm for organic) not modeled. Check your local regulations before commercial production.
  • Not for fermented sausage safety. Fermented and shelf-stable products require pH control (below 5.3 before drying), water-activity monitoring (below 0.90 for shelf stability), and specific starter cultures not covered by this tool. Treat the tool as a starting point for salt/nitrite math only; consult Marianski's Fermented Sausages for the full food-safety picture.
  • Assumes uniform absorption. For thick cuts (>5 cm), salt and nitrite penetration may be uneven at the recommended cure time; the tool does not model geometry-based diffusion. For thick pieces, extend cure time proportionally or split into smaller pieces before curing.

What is the difference between Prague Powder #1 and Prague Powder #2?

Prague Powder #1 is 6.25% sodium nitrite in salt, used for short cures (under 30 days) — bacon, pastrami, corned beef, ham. Prague Powder #2 is 6.25% sodium nitrite plus 4.0% sodium nitrate in salt, used for long cures (30+ days) — dry-cured salami, prosciutto. What is equilibrium curing and how is it different from traditional dry-cure?

Equilibrium curing adds exact percentages of salt, sugar, and nitrite by meat weight, seals the meat in a bag, and cures until diffusion completes. Impossible to over-cure because there's no excess salt. Traditional dry-curing rubs excess salt on the surface and cures until target weight loss is reached, then rinses. EQ is safer and more repeatable; traditional is what pre-refrigeration bacon and country ham used.

What is the USDA safe upper limit for sodium nitrite in cured meat?

USDA limits ingoing nitrite to 200 ppm for most whole-muscle products, with 156 ppm typical target for bacon and 120-150 ppm typical target for dry-cured whole muscle. The tool caps entries at 200 ppm with a warning above 180 ppm. Higher nitrite gains no additional botulism protection but adds carcinogenicity risk.

Can I substitute pink curing salt with sea salt for a natural cure?

Not safely. Sea salt has no nitrite. Some celery powder products are marketed as "natural nitrite" because they contain naturally occurring nitrate that converts to nitrite in the cure — but the nitrite ends up in the meat regardless of whether it came from celery powder or Prague Powder. What celery powder does NOT give you is precise dose control, which is the point of using measured Prague Powder.

Why does my recipe call for both nitrite and nitrate?

Long cures (dry-cured salami, prosciutto, dry ham) use Prague Powder #2 because they age for weeks to months and nitrite alone would be consumed by the meat before the cure completes. The nitrate reserve slowly reduces to nitrite over the aging period, keeping the cure protection active the entire time. Short cures don't need this reserve.

How long does an equilibrium cure need to be safe?

Rule of thumb: 5 days per cm of meat thickness at 3-4 °C, doubled as a safety margin. A 3 cm pork belly needs 15 days (5 × 3 doubled to be safe). At the end of the cure period, nitrite has diffused evenly through the piece and the whole thing is within a fraction of a percent of the target ppm. Longer than that doesn't hurt; shorter risks under-cured centers.
